Ingredients
• 2-3 medium zucchini, washed well
• 100 g feta cheese, crumbled
• 4 tablespoons fresh pomegranate seeds
• 2 tablespoons pine nuts, toasted
• 4-5 black or Kalamata olives, pitted and halved (optional)
• A small handful of fresh mint leaves, chopped or left whole
• 2 tablespoons extra virgin olive oil
• 1 tablespoon lemon juice
• Salt and freshly ground black pepper, to taste
Instructions
1. Prepare the zucchini: Trim the ends of the zucchini. Using a vegetable peeler or a mandoline, slice the zucchini lengthwise into very thin, ribbon-like strips.
2. Toast the pine nuts: Place a small skillet over medium heat. Add the pine nuts and toast for 2-3 minutes, stirring constantly, until they are golden brown and fragrant. Be careful not to burn them!
3. Prepare the remaining ingredients: Crumble the feta cheese. Seed the pomegranate. Chop the mint. If using olives, halve them.
4. Assemble the salad: In a large bowl, combine the zucchini ribbons, crumbled feta, pomegranate seeds, toasted pine nuts, chopped mint, and olives (if using).
5. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
6. Toss the salad: Pour the dressing over the salad and toss gently to combine all the ingredients. Taste and adjust seasoning if necessary.
7. Serve: The salad can be served immediately or refrigerated for 15-20 minutes to allow the flavors to meld.
