INGREDIENTS:
• 200g Fresh yellowfin tuna loin
• 100g Fresh calamari rings
• 6 Large shrimp, peeled and deveined
• 8 Fresh clams, cleaned
• 400ml Seafood stock or fumet
• 2 Tablespoons tomato paste
• 1 Fennel bulb, thinly sliced
• 2 Piquillo peppers, sliced
• 3 Cloves of garlic, minced
• 50g Cornstarch or flour (for dusting)
• 1 Handful fresh basil leaves
• 2 Tablespoons extra virgin olive oil
• TO TASTE: Sea salt and cracked black pepper
RECIPE:
• PREPARE THE BROTH: IN a deep pan, sauté the fennel and garlic in olive oil until soft. STIR in the tomato paste and cook for 2 minutes, then pour in the seafood stock. SIMMER for 15 minutes to develop the flavors.
• COOK THE SEAFOOD: ADD the clams and shrimp to the simmering broth. COVER and cook until the clams open and the shrimp turn pink.
• SEAR THE TUNA: SEASON the tuna loin with salt and pepper. SEAR in a very hot pan with a splash of oil for only 1 minute per side to keep the center rare. SLICE into thick medallions.
• FRY THE CALAMARI: DUST the calamari rings in cornstarch and deep-fry until golden and crispy. DRAIN on paper towels.
• ASSEMBLE: POUR the rich broth and shellfish into a wide, shallow bowl. PLACE the seared tuna slices in the center and top with the crispy calamari. GARNISH with fresh basil leaves and a drizzle of herb oil.
