* 2 tbsp Extra Virgin Olive Oil
* 1 Medium Onion, finely diced
* 3 Cloves of Garlic, minced
* 1 tsp Dried Oregano
* 1 pinch Red Chili Flakes
* 1 handful Fresh Basil Leaves
* To taste Sea Salt and Black Pepper
* 1/2 tsp Sugar
COOKING STEPS:
STEP 1: HEAT the olive oil in a small, tall saucepan over medium heat. add the diced onion and sauté until translucent and soft, about 5 minutes.
STEP 2: ADD the minced garlic and chili flakes, cooking for another minute until fragrant, being careful not to burn the garlic.
STEP 3: POUR in the tomatoes and season with salt, pepper, sugar, and oregano. bring to a gentle boil.
STEP 4: LOWER the heat to MINIMUM. cover partially and let it simmer for 20-25 minutes to develop deep flavors.
STEP 5: USE an immersion blender to process the sauce directly in the pot until it reaches a perfectly smooth and fine consistency.
STEP 6: FINISH by stirring with a WHISK to incorporate fresh basil leaves and ensure the texture is velvety before serving over pasta or fish.
