Ingredients:
• 2 kg High-quality beef bones (marrow and knuckle bones are best)
• 2 tbsp Tomato paste
• 1 large Onion, chopped
• 1 Carrot, chopped
• 1 Celery stalk, chopped
• 2 cloves Garlic, smashed
• 2 tbsp Olive oil
• 1 cup Dry red wine (optional)
• 2 Litres Cold water
• 2 Bay leaves
• 1 tsp Black peppercorns
• 1 small bunch Fresh thyme
• To taste Sea salt
Cooking Steps:
STEP 1: Roast the bones. preheat your oven to 200°C. arrange the beef bones in a single layer in a roasting pan and roast for 45 minutes until they are deeply browned, turning them once halfway through.
STEP 2: Prepare the aromatics. while the bones are roasting, in a large stockpot, heat the olive oil over medium heat. add the onion, carrot, and celery, and sauté for about 10 minutes, or until the vegetables are soft and lightly caramelized.
STEP 3: Deglaze. add the roasted bones and any pan drippings to the pot. pour the red wine into the roasting pan and scrape up any browned bits (fond). add this liquid to the pot.
STEP 4: Simmer. cover the bones with 2 litres of cold water. add the garlic, tomato paste, bay leaves, black peppercorns, and fresh thyme. bring the mixture to a gentle boil, then immediately lower the heat and let it simmer, uncovered, for 2-3 hours, or until the liquid has reduced to a deep, flavorful broth.
STEP 5: Strain. strain the stock through a fine-mesh sieve into a clean saucepan. discard the solids.
STEP 6: Reduce to a jus. return the strained liquid to the heat and continue to simmer until it has reduced to a thick, syrupy consistency, about 1 cup. use a WHISK to stir occasionally, ensuring the texture is smooth and velvety. season with salt to taste.m
