This week I am pulling out some favorite recipes that celebrate all the great produce that’s still available. I don’t know about you, but I want to get in as much as possible before colder weather comes in.
Now on to this week’s meal plan! It starts out with Zucchini Tomato and Corn Frittata, Chipotle Mushroom and Spinach Quesadillas, and Slow Cooker Greek Chicken and Green Beans. Monday brings Creamy Pesto Zucchini Pasta with Chicken and Tuesday is Turkey Taco Lettuce Wraps. Wednesday is One Pan Lemon Garlic Chicken and Asparagus and Thursday is Coconut Crusted Salmon. To end the week, meals include Zucchini Burgers and One Pan Sausage with Sweet Potatoes and Green Beans.

Sheet Pan Sweet Potato, Chicken Sausage, and Green Beans: This easy one pan meal is packed with flavors and ready in less than 30 minutes. It will quickly become a go-to weeknight meal.
Creamy Spinach Polenta: I have always loved polenta but normally it is packed with butter, cream, and cheese. This lightened up version still tastes amazing is so much better for you, and even manages to sneak in some greens.
Lemon Garlic Chicken and Asparagus: This twenty-minute dinner couldn’t be easier to make but tastes amazing. With plenty of lemon and garlic, this bright and healthy dish is always a hit.
Turkey Taco Lettuce Wraps: I am someone who never turns down a taco, but sometimes it is nice to lighten things up and make taco themed lettuce wraps that are still full of flavor and can be loaded up with all your favorite toppings.
