Ingredients:

• 500g Frozen or fresh peas

• 1 Large onion, finely chopped

• 2 Cloves of garlic, minced

• 750ml Vegetable stock

• 100ml Cooking cream

• 20g Butter

• 1 Tablespoon olive oil

• 100g Smoked ham or pancetta, shredded

• Fresh mint leaves

• Salt and black pepper to taste

• Extra cream and herbs for garnish

INSTRUCTIONS:

STEP 1: Heat the butter and olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until translucent and fragrant.

STEP 2: Pour in the peas and stir for a minute to coat them in the butter.

STEP 3: Add the vegetable stock and bring to a simmer. Cook for about 5-8 minutes until the peas are tender but still bright green.

STEP 4: While the soup simmers, fry the shredded ham or pancetta in a separate pan until crispy. Set aside on a paper towel.

STEP 5: Remove the pot from heat. Add a few fresh mint leaves and use a blender to puree the soup until completely smooth.

STEP 6: Stir in the cooking cream and season with salt and pepper. Return to low heat for one minute to warm through.

• STEP 7: Pour into a bowl, swirl a little extra cream on top, and pile the crispy ham and fresh herbs in the center.
