RECIPE:

•ingredients:

berry mousse sphere:

200g fresh raspberries and strawberries,

50g organic honey or agave syrup, 200ml light coconut cream,

3 gelatin sheets. red mirror glaze:

100g white chocolate sugar free,

50ml berry juice,

2 gelatin sheets. lime sorbet:

100ml fresh lime juice,

zest of 1 lime,

150ml water,

30g stevia or honey

. instructions:

prepare the mousse by blending berries and mixing with melted gelatin and whipped coconut cream. pour the mixture into silicone sphere molds and freeze for at least 4 hours. make the mirror glaze by melting chocolate with berry juice and gelatin then let it cool to 30 degrees celsius. remove spheres from freezer and pour the glaze over them until perfectly coated. for the sorbet mix water lime juice and sweetener then freeze while stirring every 30 minutes. plate the glazed sphere next to a small scoop of sorbet and decorate with edible flowers and berry drops.
