INGREDIENTS:

• SEAFOOD: 200g prawns,

200g mussels,

150g squid rings,

and 150g white fish chunks.

• BASE: 2 tbsp yellow curry paste, 400ml coconut milk,

and 1 tbsp vegetable oil.

• VEGGIES: 1 red bell pepper,

100g baby corn,

and fresh cilantro.

• SEASONING: 1 tbsp fish sauce,

1 tsp brown sugar,

and lime juice.

INSTRUCTIONS:

• STEP 1: HEAT the oil in a large pan and fry the curry paste for 2 minutes.

• STEP 2: POUR in half of the coconut milk and stir until the oil separates.

• STEP 3: ADD the remaining coconut milk and the vegetables, then simmer.

• STEP 4: PLACE the seafood into the pan and cook for 4 minutes until the mussels open.

• STEP 5: SEASON with fish sauce, sugar, and lime; serve with jasmine rice.
