INGREDIENTS:

• 1 Whole Dover Sole (approx. 400-500g), cleaned and skinned

• 50g All-purpose flour (for dusting)

• 50g Unsalted butter (high quality)

• 1 Fresh lemon, juiced

• 1 tbsp Fresh parsley, finely chopped

• Sea salt and freshly cracked black pepper to taste

• 1 tbsp Olive oil

• Garnish: White asparagus, micro-herbs, and edible flowers

INSTRUCTIONS:

1. PREPARE THE FISH: Pat the Dover Sole dry with paper towels. Season both sides with salt and pepper, then lightly coat in flour, shaking off any excess.

2. SEAR TO GOLDEN: Heat the olive oil and half the butter in a large skillet over medium-high heat. Once foaming, place the fish in the pan.

3. COOKING: Sauté for 3-4 minutes per side until the skin is golden brown and the flesh is tender. Carefully remove the fish and place it on a warm serving plate.

4. THE MEUNIÈRE SAUCE: Wipe the pan clean and add the remaining butter. Heat until it starts to turn a nutty brown color (beurre noisette). Immediately add the lemon juice and parsley.

5. THE FINISH: Pour the hot lemon butter over the fish. Garnish with steamed white asparagus and edible flowers for that signature fine dining look.
