• 1 large Shallot, finely minced
• 2 cloves Garlic, minced
• 1 cup Dry white wine (Pinot Grigio or Sauvignon Blanc)
• 1 cup Heavy cream
• 1 tsp Lemon zest, freshly grated
• 1 tbsp Fresh chives, finely chopped (plus extra for garnish)
• 1 tbsp Fresh parsley, finely chopped (plus extra for garnish)
• To taste Sea salt and fresh black pepper
Cooking Steps:
STEP 1: Sauté the aromatics. in a medium saucepan, melt the butter over medium heat. add the minced shallot and cook until softened and translucent, about 3-4 minutes. add the minced garlic and cook for 1 additional minute, until fragrant.
STEP 2: Deglaze and reduce. pour the dry white wine into the pot. bring the mixture to a simmer, scraping up any browned bits (fond) from the bottom. continue to simmer until the liquid is reduced by about half, approximately 5-7 minutes.
STEP 3: Incorporate the cream. pour in the heavy cream and whisk to combine. bring the mixture back to a gentle simmer (do not boil). reduce the heat to low and simmer, whisking occasionally, until the sauce is slightly thickened, about 5-6 minutes. it should coat the back of a spoon.
STEP 4: Finish with fresh flavors. remove the pot from the heat. stir in the fresh chives, parsley, and lemon zest. season the sauce generously with salt and fresh black pepper to taste.
