INGREDIENTS

* 2 fresh medium squids cleaned and scored

* 50ml extra virgin olive oil

* 1 bunch fresh parsley and chives

* 1 garlic clove minced

* 50ml dry white wine

* 1 tablespoon cold unsalted butter

* sea salt and black pepper to preference

* lemon zest for finishing

PREPARATION

* step 1 blanch the herbs in boiling water for 30 seconds then shock them in ice water to maintain vibrant color blend with olive oil and strain to create the emerald oil

* step 2 pat the squid completely dry and season with salt and pepper heat a heavy cast iron skillet or non-stick pan on high heat until smoking slightly

* step 3 sear the squid for 90 seconds to 2 minutes on each side until charred and tender avoid overcooking to prevent a rubbery texture

* step 4 in the same pan reduce the heat and deglaze with white wine and minced garlic let it simmer until reduced by half then whisk in the cold butter until glossy
