Although coffee is the first thing I think about when it comes to Back to School season, next on the list is breakfast. Because no matter how much you plan ahead, it seems like the tiem flies by and before you know it, it’s time to get everyone out the door. And this is true whether you are getting kids ready to go back to school or just getting back into a routine yourself after summer. The time flies. I am a huge fan of a good breakfast sandwich and am pretty much tempted on a daily basis to run into my local coffee shop for one of their yummy wraps. Unfortunately that habit is tough for both my wallet and my waistline. Instead I love to prepare these make ahead sandwiches that I can pull out of the freezer, toss in the microwave, and enjoy just a couple of minutes later. It’s faster than stopping to buy something, tastes better, and is much more affordable.
Oatmeal is a staple since it is something I can always count on to keep my full all morning. Plus it has so many healthy benefits, it’s something I feel good about feeding myself and my family. Freezer Pancakes and Waffles
I am definitely someone who could eat pancakes every day for breakfast and be a happy woman. However usually I only have time on the weekends to whip up a batch. However every time I do, I double the recipe and freeze the extras. After a couple of minutes in the microwave or a warm pan, they are ready to eat again and taste just as good. Usually I top mine with nut butter or yogurt to squeeze in some extra protein. And there is always fresh fruit.
