2 Healthy, Fun, DIY Unicorn Frappuccino Recipes to Try at Home

Colorful unicorn-themed cakes, pastries, drinks and meals have been trending everywhere on social media sites these past months, and many people just can’t get enough of the eye candy. For kids and teens, the array of colors surely makes noshes and beverages look more delectable; and for adults, the idea of rainbow-colored edibles brings a sense of nostalgic fun and magic. 

If you’re a Starbucks fan or simply a social network user with friends who frequent the coffeehouse chain, you’ve likely caught wind of the much-talked-about Unicorn Frappuccino. While the wildly popular coffee drink is no longer available, many people have sought to recreate the beverage. Thankfully, health-conscious foodies discovered ways to make rainbow-colored alternatives that are much healthier and far less sugary compared to the overly sweet Starbucks drink. 

To hop on board the unicorn food and drink trend, try out these two healthier, unicorn-inspired recipes. 

Healthy Unicorn Frappuccino With Pink, Blue and Yellow Colors 

This whimsical drink is loaded with vitamin C and anti-inflammatory ingredients. More importantly, it contains no refined sugar at all. This healthy version of Unicorn Frappuccino tastes just like a tart with a tinge of sweet vanilla ice cream and notes of banana and coconut. 

First, refrigerate a can of full-fat organic coconut cream or coconut milk for 6 hours. For the pink color, combine ice with 1 packet frozen pitaya, ¼ cup coconut milk, ½ banana, 1 teaspoon maple syrup and 2 tablespoons yogurt in a high-speed blender. For the blue color, mix ice with 4 tablespoons chilled coconut cream, 2 tablespoons coconut milk, ½ teaspoon spirulina, ½ banana, 1 teaspoon maple syrup, ¼ teaspoon vanilla extract and extract of ½ lemon. Blend until you create a thick consistency. 

Top off your rainbow drink with icing by mixing 2 teaspoons coconut milk, 2 teaspoons melted coconut oil, 3 teaspoons melted coconut butter, ¼ teaspoon vanilla extract, ½ teaspoon maple syrup and 2 teaspoons turmeric. Place the mixture in a piping bag, nip the tip and spread the icing to the inner part of a transparent glass. Alternately add spoonfuls of pink and blue layers to create a rainbow effect. Finally, add a bit more icing to the top along with spirulina, natural sprinkles or your other choice of toppings. 

Healthy Unicorn Smoothie With Red, Green and Purple Colors 

This smoothie recipe boasts nutritious ingredients, including strawberries and raspberries that are packed with vitamin C, fiber and folate. Like the previous recipe, this unicorn-inspired drink features layers of different colors and a delicious cream topping. 

To start with, mix 1 tablespoon of blueberry powder with ¼ cup yogurt or cashew cream, and put in a piping bag. Mix another ¼ cup yogurt or cashew cream with matcha powder. Cut the tips of the bags, and form swirls on the interior of a clear glass. Next, create the smoothie base by combining 2 cups raw coconut water, 1 cup frozen raspberries, 1 cup frozen strawberries, ½ frozen banana and extract of ½ lemon in a high-speed blender. Add a bit of water if the consistency is too thick. 

For the whipped cream, scoop chilled coconut cream into a bowl, and add in 1 teaspoon vanilla extract and 2 tablespoons honey or maple syrup. Blend using a hand mixer until fluffy, and then transfer to a piping bag. Cut the tip and spread a heap over your smoothie. To make your unicorn smoothie more appealing, you may want to garnish with freeze-dried raspberries, chia seed, blueberry powder, blue green algae powder or other toppings.
